Today we’re making an easy, cheesy dip that will go great with tortilla chips, crackers, or pretzels at your next game day, party, or cookout. It’s bound to be a crowd favorite with zesty Rotel tomatoes and savory taco-flavored sausage smothered in smooth and melty Velveeta cheese.

There are many ways to build on the flavor and customize it. Load it up with black beans, corn, onions, green chilies, green onions, or fresh jalapeños. You can add more meat choices like bacon bits or chorizo. Add some smokiness to the dip with smoked paprika or ancho chili powder or add some heat with jalapeños, chipotle chili powder, chili powder, or by using Velveeta Jalapeno.

VELVEETA ROTEL SAUSAGE DIP RECIPE TIPS

Sausage – I used 1lb. of sausage for a very meaty cheese dip but if you prefer a higher cheese-to-meat ratio, reduce the amount to 1/2 lb. I used Jimmy Dean’s breakfast sausage for this recipe but you could also try mild, sweet, hot Italian sausage, or ground beef. While browning the meat, this meat smasher comes in handy to break up the chunks. I like a few crunchy bits in my dip so I usually brown it until some of the sausage is golden around the edges.

Taco seasoning – I used a packet of Taco Bell seasoning. If you have a go-to taco spice mix, use that instead. Taco seasoning usually consists of ground cumin, garlic and onion powder, oregano, paprika, chili powder and salt and pepper. If you don’t want to use packets of pre-made seasoning, try adding these seasonings to the dip or mix and match.

Rotel – I used the original Rotel but if you want some heat, try the hot version with spicy habaneros. Rotel has a ton of variety like original, mild, hot, fire-roasted, Mexican-style lime and cilantro, so you can experiment with these other flavors as well.

Garnish – For a pop of color, garnish with freshly chopped cilantro.

Slow cooker method – Brown the sausage first and cook all the ingredients in a 3 qt. slow cooker for 2-3 hours on high or 4-5 hours on low. Keep on the warm setting when entertaining.

Consistency – If the dip is too thick for you, drizzle in some milk in small increments and mix until the dip is the consistency you like.

Reheating – Reheat in the microwave for about 30 seconds to a minute. The dip will thicken over time as leftovers in the fridge so add milk to thin it out after reheating, then stir and adjust the consistency to your liking.

Customize It

Load it up – Add some black beans, corn, onions, green chilies, green onions, or fresh jalapeños. For more meat choices, try some bacon bits or chorizo.

Switch out Rotel – You can use chunky salsa in place of Rotel if you’re not a fan of the green chilies.

Add some smoke – Make the dip smoky with some smoked paprika or ancho chili powder.

Add some heat – Spice it up with jalapeños, chipotle chili powder, chili powder, or use Velveeta Jalapeno.

  • 1 lb. ground sausage/beef
  • 1 (1 oz.) pack taco seasoning
  • 1/2 cup milk
  • 16 oz. Velveeta, cut into 1/2” cubes
  • 1 (14.5 oz) can Rotel, drained

  1. In a large skillet over medium-high heat, brown the sausage until cooked.
  2. Reduce heat to medium, season with taco seasoning and add water according to package directions. Simmer until reduced.
  3. Add Rotel and stir to mix.
  4. Pour in milk and cubed Velveeta.
  5. Stir until the cheese melts and the sauce is smooth.
  6. Dish and serve warm with chips and crackers.
  7. Enjoy!
