SALT LAKE CITY — Utah's number of COVID-19 cases has increased by 2,614 on Wednesday, with 21 more deaths reported, according to an update provided by the Utah Department of Health. The new COVID-19 case numbers indicate a 1% increase in positive cases since Tuesday. The rolling seven-day average number of positive cases per day is now at 2,033, according to the health department. The positive test rate per day for that time period is now 25%. There are now 484 COVID-19 patients currently hospitalized in Utah, state data shows. Of the 21 new deaths, nine were from Salt Lake County and five were from Utah County, but the department reported new deaths across the state. A Tinley Park mom says her daughter died just three days after the otherwise healthy teen was hospitalized with coronavirus just before Christmas. Sarah Simental, a Lincoln-Way East senior who just turned 18 last month, first reported a minor headache on Dec. 16, her mother Deborah Simental said. The next day, she began feeling congested and had a sore throat. "My immediate thought was these are symptoms of COVID," Deborah Simental said. Outside of her home, Simental had only seen her boyfriend prior to experiencing symptoms, her mother said. On Friday, her symptoms continued as she developed a fever, chills and vomiting.
